Ingredients..
- Carrot cut into long strips 1
- Egg 1
- Oil 2 tablespoons
- Mustard seeds 1/4 tspoon
- Chopped onion 1 small
- Chopped ginger 1 small piece
- Chopped green chilly 1
- Turmeric powder a pinch
- Chopped spring onion 2-3 tablespoons
- Chopped cilantro for garnishing
- Salt and pepper to taste
Procedure...
- Initially heat up a pan on medium flame and add oil into it
- When its hot add mustard seeds, and as it crackles add onion,ginger and green chilly
- Saute it for ,1-2 minutes and add turmeric powder
- Mix it and add carrot strips
- Saute it well and add little water and cover the lid to cook for 3-5 minutes
- After that, when carrots turn almost soft crack in the egg and season it with salt and pepper
- Mix it well and cook it until eggs are done and finally add spring onions
- After mixing for 1-2 minutes serve it hot garnished with chopped cilantro
Its a great side dish with bread or roti
Or u can have it as such.....
