- Hard boiled eggs 1(cut into 4 pieces)
- Boiled and diced potato 1
- Cooked chickpeas 1/2 cup
For dressing
- Lemon juice 1 tablespoon
- Chopped cilantro 1-2 tablespoons
- Salt and pepper for seasoning
- Olive oil 2 tablespoons
Procedure...
- Take a bowl and add all ingredients mentioned under "for dressing" into it
- Mix well to form a smooth dressing
- Take another bowl and add potatoes and chickpeas
- Place egg slices as shown
- Just before serving, pour dressing into it and mix well,pour over the egg pieces as well
- Healthy egg potato salad is ready yo be enjoyed!!!!!
