- Boneless chicken cut into small 10-12 pieces
- Grated carrot 2 medium sized
- Cinnamon 1-2 piece
- Cloves 3-4
- Cardamom 3-4
- Cashew nuts 5-6 broken
- Raisins 5-6
- Ghee 2-3 tablespoons
- Jeera 2 tspoons
- Sliced onions 1 medium
- Chilly ginger garlic paste 1 tablespoon
- Red chilly powder 1/4 tspoon
- Turmeric powder 1-2 pinch
- Garam masala 1/4 tspoon
- Biryani masala 1/4 tspoon
- Chicken masala 1/4 tspoon(optional)
- Boiled/ cooked rice 1 1/2 cups
- Lemon juice 1-2 table spoons
- Spring onions 4-5,chopped
- Chopped cilantro 1/4 cup
- Crushed pepper 1/4 tspoon
- Oil 2-3 tablespoons
- Salt to taste
For marinating chicken
- Red chilly powder 1/4 tspoon
- Coriander powder 1/2 tspoon
- Turmeric powder 1/4 tspoon
- Crushed pepper 1/4 tspoon
- Garam masala 1/4 tspoon
- Lemon juice 1 -2 tspoon
- Yoghurt 1 tablespoon
- Chilly ginger garlic paste 2 tspoons
- Salt to taste
Procedure....
- Firstly clean the chicken pieces and marinate with the ingredients mentioned below"for marinating chicken"
- Keep it for at least 30 minutes
- Now take a nonstick pan and heat on medium flame
- Add oil into it and when its hot add the marinated chicken pieces
- Saute them until they are cooked and get brown color
- Now remove the chicken pieces into a plate and add ghee to the same pan
- When its hot enough add all the dry masalas and cashews
- When they r done add raisins
- When raisins swell add onions.and saute well until golden brown
- Now add chilly ginger garlic paste and saute well till the raw smell goes
- Again add all the masalas(powders) and saute them
- Add carrots and sprinkle some water and cook it by covering the lid on low flame for 5-6 minutes
- Season it with salt and pepper
- Now add chicken pieces,lemon juice, spring onions and cilantro
- Finally add the cooked rice and mix well
- Again sprinkle some water and cover the lid and cook for 5 minutes on low flame so that all the flavor of carrot and chicken are infused into the rice....this way rice becomes more flavorful
- After that open the lid and stir the rice for 2-3 minutes
- Serve ur delicious rice recipe garnished with spring onions and some carrot slices...
