- Okra/ ladies finger 10-12,cut into 1/2 inch thick pieces
- Cooked basmati rice 1 cup
- Cinnamon 1/2 stick
- Cloves 2-3
- Cardamom 2-3
- Cahews 5-6
- Golden raisins 5-6
- Sliced onions 1 large
- Chopped tomatoes 1 large
- Chilly ginger garlic paste 1 tspoon
- Red chilly powder 1/4 tspoon
- Turmeric powder a pinch
- Coriander powder 1/4 tspoon
- Biryani masala 1/2 tspoon
- Lime juice 1/2 tspoon
- Yoghurt 2 tablespoons
- Crushed pepper 1/4 tspoon
- Chopped cilantro 2-3 tablespoons
- Ghee /oil 2 tablespoons
- Salt to taste
To fry okras..
- Red chilly powder 1/4 tspoon
- Turmeric powder 1/4 tspoon
- Crushed pepper a pinch
- Oil 3 tablespoons
- Salt to taste
Procedure...
- Initially to fry okras,heat a pan on medium flame and add oil into it
- Add okra pieces and ground spices as mentioned below 'to fry okras'
- Now saute this until okra becomes nicely brown and cooked as shown below...
- This may take 6-8 minutes....
- After removing the okras into a plate add ghee /oil into the same pan
- When it turns hot add dry spices and cashews....
- Saute them for awhile and add raisins...
- When raisins get blown up,add onions and saute until they are golden brown
- At this point add chilly ginger garlic paste
- After the raw smell from the paste goes...add dry ground spices mentioned in the ingredients and salt to taste
- After sauting it well add yoghurt and cooked rice
- Mix everything together so that rice gets evenly coated in the masala
- Now add the okras ,chopped cilantro and finally lime juice..mix them together,check for the taste and stir it for 3-4 minutes...and serve..
