aloo khati roll/potato frankies











Recipe...
Ingredients...
For dough

  • Maida 1/2 cup
  • Wheat flour 1/4  cup
  • Oil for kneading
  • Water for kneading
  • Salt to taste
For potato mix
  • Boiled and diced potatoes 1 large/2 medium
  • Oil 2 tablespoons
  • Cumin seeds 1/4 tspoon
  • Red chilly powder 1/4 tspoon
  • Coriander powder 1/4 tspoon
  • Turmeric powder a pinch
  • Chat masala 1/4 - 1/2 tspoon
  • Garam masala 1/4 tspoon
  • Salt and pepper for seasoning
Other ingredients..
  • Finely chopped onion 1
  • Finely chopped cilantro 2-3 tablespoons
  • Tomato ketchup 2/3 tablespoons
  • green chutney
Procedure...
  • Initially add in all the ingredients mentioned under "dough" into a a mixing bowl and knead well into a smooth dough


  • Allow it to rest for at least 20-25 minutes 
  • Meanwhile For preparing potato mix,heat up a pan a on medium flame and add oil into it
  • When oil becomes hot add cumin seeds,as it splutters add in cooked and diced potatoes

  • Add all the dry ground spices ,mix well and saute for at least 4-6 minutes until the potatoes get nicely roasted and coated in the masala as well


  • Switch off the flame
  • Now take the dough and divide it into small ball and roll them into slightly thick Rotis

  • Now heat up another pan on medium flame and prepare Rotis in the same way as normal chapatis




  • Now place the prepared roti on a plate
  • Keep chopped onions and cilantro ready

  • place all the prepared items over the roti one by one in the same order as shown








  • Now roll up the Rotis into frankies following the below shown steps





  • Finally cut them diagonally through the center 


  •  serve them with lemon,sauce,chutney and chopped onions...
