sukha chicken....

Recipe...
Ingredients...

  • Chicken with bone cut into medium size pieces 250 GMs
  • Cracked pepper corns 1 1/2 tablespoons
  • Dry whole red chillys 3-4
  • Coriander powder 3 tspoons
  • Turmeric powder 1/4 tspoon
  • Garam masala 1/4 tspoon
  • Chicken masala 1 tspoon
  • Diced onions 2
  • Garlic cloves 5-7
  • Ginger 1 inch piece diced
  • Oil 2-3 tablespoons
  • Mustard seeds 1/4 tspoons
  • Vinegar 3 tspoons
  • Diced onion 1 for final presentation
  • Chopped cilantro for garnishing
Procedure....
  • Firstly for dry roasting the masala,heat up a pan on medium flame
  • Then add pepper and dry chillys into it...

  • Roast for 3-4 minutes,then reduce the flame to lowest possible adjustment and add coriander powder

  • Roast for 2-3 minutes and then add all other dry ground spices and saute for 3-4 minutes until it leaves nice aroma..be very careful not to burn the spices

  • Now add in onions,ginger and garlic

  • Saute for another 4-5 minutes and switch off the flame

  • When this mix gets slightly cooled,add it to the blender along with vinegar and salt to taste
  • Grind it into a smooth paste

  • Fork the cleaned chicken pieces and rub this ground masala over the chicken really well so that it absorbs all the flavors



  • Cover the marinated chicken with cling sheet and keep it aside for 30 minutes and then refrigerate for at least 2-3 hours

  • Keep refrigerated overnight for best results
  • Now heat up a pan on medium flame and add oil into it

  • When oil becomes hot add in mustard seeds and as it crackles add marinated chicken


  • Mix it well ,cover the lid and cook on low to medium flame for 18-20 minutes or until the chicken is nicely done(do not add water..water gets oozed out from the chicken and marinade)

  • Now saute the chicken until all moisture gets evaporated and it gets nicely roasted
  • Now add diced onion and saute for another 3-5 minutes

  • Finally garnish with chopped cilantro and serve hot with rotis,pooris or bhatura or even as an appetizer!!!
