Ingredients...
- Hard boiled and peeled eggs 2
- Oil 2 tablespoons
- Sliced onions 3 large
- Chopped tomatoes 2-3
- Chopped green chillys 2-3
- Red chilly powder 1/2 tspoon
- Turmeric powder 1/4 tspoon
- Chopped cilantro 3 sprigs
- Salt to taste
Procedure...
- Initially heat up a pan on medium flame And add oil into it
- Once oil becomes hot add in onions, tomatoes and green chillys
- Season it with salt,mix well ,cover the lid and cook on low to medium flame with ocational stirring for 12-15 minutes until those get nicely tender and roasted
- Now add in ground spices mentioned and saute for another two minutes
- Make slits in the eggs and add them as well
- Cover them with the masala and cook for another 5-6 minutes
- Add some cilantro,mix it up and Switch off the flame
- Garnish with chopped cilantro and serve hot with roti or parathas
