banana yogurt wholewheat pancakes with fruit topping














Recipe..
Ingredients..

For the batter

  • Wholewheat flour 1 cup
  • Sugar 1/4 cup
  • Baking powder 1 tspoon
  • Egg 1
  • Ripe banana 1 or 2
  • Vanilla extract 1 tspoon
  • Yogurt 1/4 cup
  • Milk 1/2 cup,you can adjust the amount to get the desired consistency for the batter
  • Salt to taste
  • Butter to grease the fry pan for making pancakes
For fruit topping
  • Cut fruits 1/2 cup,I used apples and grapes
  • Sugar 1/4 cup 
  • Water 1/4 cup
  • Lime juice 2 tspoon
  • Cornstarch dissolved in cold water 1-2 tspoon for thickening
Procedure..
  • Take a mixing bowl and add in all the dry ingredients for the batter and mix well
  • Now in a blender add remaining wet ingredients along with banana and blend well
  • Pour it into the dry mix and beat well into a smooth thick batter without any lumps

  • Heat up a pan on medium flame and apply butter on to it
  • Now pour in some batter

  • After a minute it will start forming bubbles

  • When one side gets cooked well flip it over and cook other side as well
  • Pancakes should cooked slowly at low flame just to make sure that it gets cooked well from inside too
  • When pancakes get ready from both sides take it onto a plate


  • For making fruit topping, initially mix up all the fruits

  • Now in a sauce pan add the fruits,sugar water and lime juice
  • Allow it to cook for 10-15 minutes until the fruits get really soft and tender

  • Finally pour in slowly the dissolved corn starch to thicken the syrup,and cook for another few minutes and ur fruit topping is done

  • Once the fruit topping s ready,pour it over the pancakes and serve hot....
