Gobi 65 dry....

Recipe...

Ingredients...

  • Cauliflower 1; separated into florets
  • Sliced green chillys 2-3
  • Curry leaves 2 sprigs
  • Oil ,for deep frying
  • Turmeric powder 1 tspoon
  • Salt to taste
For the batter
  • Maida 3 tablespoons
  • Corn starch 4 tablespoons
  • Chilly ginger garlic paste 2 tablespoons
  • Red chilly powder 2 tspoon
  • Crushed pepper 1 tspoon
  • Lime juice 1 tspoon
  • Chopped cilantro 1/2 cup
  • Garam masala 1/2 tspoon
  • Water,to make thick batter to coat the florets
  • Salt to taste
Procedure..
  • Initially in a sauce pan add enough water (required to cover the florets) and allow it to boil
  • Once it starts boiling add salt,and  1 tspoon turmeric powder and the florets
  • Boil it for 5 minutes, so that it gets cleaned and half cooked,after that drain them

  • Now to a bowl add all the ingredients mentioned below "for the batter"
  • Mix it into a thick paste
  • Now add in the drained florets and mix well so that the batter gets evenly coated..

  • Heat up a pan on medium flame and add enough oil to deep fry cauliflower florets
  • Add them in one by one and fry till golden brown. This may take 5-6 minutes
  • Now drain them onto a paper towel
  • Once they attain room temperature, fry them second time in the same oil for 3-4 minutes. This makes the florets super crispy
  • This time add in the sliced green chilly and curry leaves as well into the oil,and get them fried
  • Serve them hot with chutneys or sauce...
