Ingredients..
- Potato 1 cut into small pieces
- Carrots 2 cut into small pieces
- Oil 2 tablespoons
- Mustard seeds 1/4 tspoon
- Cumin seeds 1/4 tspoon
- Dry whole red chilly 2
- Tomato 1
- Green chilly 1
- Ginger 1 small piece
- Turmeric powder 1/4 tspoon
- Red chilly powder 1/2 tspoon
- Coriander powder 1/2 tspoon
- Chopped cilantro 2 tablespoons
- Salt to taste
Procedure...
- Initially add in tomato,ginger and garlic into a mixer and grind well into a smooth paste
- Now heat up a pan on medium flame and add oil into it
- Once the oil becomes hot add in mustard seeds
- As it crackles add in cumin seeds and red chilly
- Saute and add the above Tomato mixture
- saute it for 5-6 minutes or until masala starts oozing out oil
- Now add dry ground spices and salt to taste
- Saute it for 1-2 minutes and add in veggies
- Mix well and add 1/2 -1 cup of water enough to almost cover the veggies and close the lid
- Cook for 7-10 minutes or until vegetables are nicely cooked and turns tender
- Finally add in cilantro,mix well and serve hot with rice,roti or any Indian bread
