ghee rice..

Recipe..
Ingredients...

  • Basmati Rice 1 cup
  • Ghee 2-3 tablespoons
  • Cinnamon 1 stick
  • Cloves 5-7
  • Green cardamom 5-7
  • Black cardamom 1-2(optional)
  • Black pepper corns 5-7
  • Fennel seeds 1/8 tspoon
  • Broken cashews 1 tablespoon
  • Golden raisins 1 tablespoon
  • Chilly ginger garlic paste 1 tspoon
  • Yogurt 1-2 tablespoons
  • Lemon juice 2 tablespoons
  • Salt to taste
  • Fried onions and cashews for garnish
Procedure..
  • Wash the rice thoroughly and soak for at least 25-30 minutes
  • Initially heat up a pressure cooker on medium flame and add ghee into it
  • As ghee becomes hot,add whole dry spices
  • Saute for 1-2 minutes and then add cashews
  • As cashews turn golden brown, add raisins
  • Saute until raisins puff up,and then add chilly ginger garlic paste
  • Saute until its raw smell is gone and then add the washed and soaked rice
  • Now add yogurt and mix well for 3-5 minutes
  • Add measured water,salt and lemon juice
  • Mix well and close the cooker(do not put the whistle)
  • Cook on high flame 
  • As air starts releasing from the cooker,put on the whistle and reduce the flame to medium
  • As soon as first whistle sound starts,switch off the flame
  • When all the pressure s released,open the cooker and serve ur ghee rice hot with a topping of fried onion and cashews!!!!
