malpua...

Recipe..
Ingredients...

  • Whole wheat flour 1 cup
  • Sugar 3/4 cup
  • Baking soda 1/4 tspoon
  • Salt to taste
  • Melted ghee 1 tablespoon
  • Milk 3/4 -1 cup
  • Cardamom powder 1/2 tspoon
  • Oil for frying
For garnishing
  • Crushed pistachios 2 tspoons
  • Granulated sugar 1 tspoon 
Procedure...
  • Initially into a mixing bowl add in first six ingredients and mix very well into a smooth and "easy to pour" consistency batter


  • Adjust the amount of milk to get desired consistency
  • Keep this batter for at least 2-3 hours for best results
  • Now heat up a pan on medium flame and add oil into it
  • At this stage add in cardamom powder to the batter and mix well
  • As the oil becomes hot reduce the flame to medium adjustment and pour in some batter by spreading the batter roundwrds so that it gets nicely spread

  • As one side becomes golden brown, flip and cook the other side as well

  • For flipping u can use 2 spatulas,coz this sweet will be really soft to handle with one spatula
  • Once its done,while taking it out,squeeze it with the two spatulas so that the excess oil is drained out and place it onto a paper towel for further absorption of oil
  • Finally serve them by garnishing with sugar and pistachios
Note..
  • In this recipe,instead of sugar,u can also use jaggery
  • Use of a nonstick pan for preparing malpuas are highly recommended to avoid sticking to the bottom!!!
