Pappadam thoran!!!


Recipe...
Ingredients...

  • Pappadam 5-6
  • Oil 1/2 cup
  • Mustard seeds 1/4 tspoon
  • Cumin seeds 1/8 tspoon
  • Halved green chillies 1-2 
  • Sliced shallots 6-7
  • Dried red chillies 1-2
  • Curry leaves 2 sprigs
  • Grated coconut 3/4 cup
  • Red chilly powder 1/4 tspoon
  • Turmeric powder a pinch
  • Salt to taste
Procedure...
  • Initially heat up oil in a sause pan and fry all papads
  • Heat up another pan and add 2-3 tablespoons of oil
  • Once it's hot crackle mustard seeds and cumin seeds
  • Add in green chillies,shallots,curry leaves, dry red chillies and saute well
  • Finally add grated coconut,red chilly powder,turmeric powder ,salt to taste and fry well for 4-5 minutes
  • At this stage scramble the fried papads into the pan and saute for 5-6 minutes on low flame....
Now delicious papadam tthoran is ready to be served with rice. .!!!!

Sooji toast/rava toast!!!
Recipe..

Ingredients...

  • Bread slices 2
  • Rava/sooji 4 tablespoons
  • Yoghurt 4 tablespoons
  • Finely chopped onion 1/2
  • Finely chopped tomatoes 1/2
  • Finely chopped green chillies 1
  • Chopped cilantro 2 sprigs
  • Chopped curry leaves 1 sprig
  • Turmeric powder a pinch
  • Salt to taste
  • Ghee for toasting
Procedure...
  • Initially take a bowl ,add sooji and yoghurt into it 
  • Mix it well and then add onions,tomatoes, green chillies, curry leaves, cilantro, turmeric powder and salt to taste
  • Again mix it well and keep for atleast five minutes
  • Half the bread slices diagonally
  • Spread the mix onto one side of the bread slices

  • Now heat up a pan and add 1 tspoon ghee
  • Place the bread slices with the rava mix side touching the hot surface

  • Cook it for almost 4 minutes or until it turns golden brown
  • Drop ghee on the other side of the bread slice and flip it
  • Once it gets crisp and golden brown from both sides...serve hot with tomato ketchup or green chutney....!!!!

Instant rice flour dosa
Recipe

Ingredients..


  • Rice flour 1 cup
  • Finely chopped onions 2 medium
  • Finely chopped green chillies 1-2
  • Finely chopped cilantro 1/4 cup
  • Finely chopped curry leaves 1 sprig
  • Cumin seeds 1/2 tspoon
  • Water 2-3 cups
  • Salt to taste
  • Oil to make dosa
Procedure..
  • Initially take a bowl and add all the ingredients mentioned above except oil 
  • Mix it well and add water accordingly to get a pouring consistency batter
  • Now keep the batter for atleast 10 minutes
  • Heat up a nonstick tawa on medium flame
  • Once it's hot enough add 1-2 tspoons of oil and pour 1/4 cup batter and move the tawa to spread the batter enough resulting in thin dosas
  • Cover it with a lid and cook for 2-3 minutes until one side gets done
  • Now flip it and drop in 1-2 tspoons of oil again and cook until the other side as well is done
  • Remove from the pan and serve hot with chutney...

rava dosa...

Recipe..
Ingredients...

  • Roasted rava/semolina 1 cup
  • Rice flour 1/4 cup
  • Water 3  -3 1/2 cups
  • Chopped cilantro 2-3 tablespoons
  • Chopped green chilly 2
  • Finely chopped onion 2 medium
  • Turmeric powder 1/4 tspoon
  • Oil for making dosas
  • Salt to taste
Procedure..
  • Take a bowl and add all the ingredients into it except oil and chopped onion
  • Now mix it well to get watery consistent batter(add water accordingly)
  • Now heat up a pan on medium flame and as it become hot drop 1-2 tspoons of oil onto the tawa
  • Pour in batter on to the hot tawa and spread it over
  • Spread some chopped onion over it and wait until the dosa gets cooked and crisp on one side 
  • Now drop some oil over the dosa and flip it and cook the other side as well until it too turns crisp and golden brown 
  • Remove dosas on to a plate and Serve them hot with spicy onion chutney...

spicy brinjal fry..

Recipe...

Ingredients..

  • Brinjal 2 cut into thin slices
  • Chilly powder 1/2 tspoon
  • Coriander powder 1/2 tspoon
  • Turmeric powder 1/4 tspoon
  • Garam masala 1/4 tspoon
  • Pepper powder 1/4 tspoon
  • Lime juice 1-2 tspoon
  • Oil 3-4 tablespoons
  • Salt to taste
Procedure..
  • Take brinjal slices in a bowl and add all the rest of the ingredients except oil into it
  • Mix well together and keep it closed aside for at least 10-15 minutes
  • Now heat up a pan on medium flame and add oil into it
  • As oil becomes hot, place the brinjal slices into it and cook on both sides until it turns crisp enough
  • Once done,serve them hot as a starter with roti or as a side dish with rice

urad dal vada/uzhunnu vada...!!!!

Recipe...

Ingredients....

  • Urad dal 100 grams (soaked for at least 4-5 hours or the whole night)
  • Finely Chopped onion 1 
  • Chopped green chillys 2
  • Chopped ginger 1 small piece
  • Cracked pepper corns 1 tspoon
  • Oil for frying
  • Salt to taste
Procedure...
  • Initially grind the soaked urad dal into a smooth thick paste (add 1-2 tspoons of water only if necessary ,grinding urad dal without water is the best option)
  • After that add onions,green chillys,ginger, pepper corns and salt to taste
  • Mix well and heat up oil in a pan for frying
  • Apply water on ur palms and take little of the mix and give shape to vada with a hole in center and dip it into the hot oil
  • Flip and cook until both sides get golden color
  • Serve hot with coconut chutney....!!!!yummm!!!!!!!!

ripe guava juice..

  • Ripe guavas 2 medium sized
  • Cold water 2 cups
  • Sugar 2-4 tablespoons
  • Guava slices 2 for decoration
Procedure..
  • Add guava pieces,water and sugar into a blender and blend well
  • Serve it cool garnished with guava slices
  • Yummy delicious juice s ready to be served

salad recipes

egg potato salad..

Recipe...
Ingredients..

  • Hard boiled eggs 1(cut into 4 pieces)
  • Boiled and diced potato 1
  • Cooked chickpeas 1/2 cup
For dressing
  • Lemon juice 1 tablespoon
  • Chopped cilantro 1-2 tablespoons
  • Salt and pepper for seasoning
  • Olive oil 2 tablespoons
Procedure...
  • Take a bowl and add all ingredients mentioned under "for dressing" into it
  • Mix well to form a smooth dressing
  • Take another bowl and add potatoes and chickpeas
  • Place egg slices as shown 
  • Just before serving, pour dressing into it and mix well,pour over the egg pieces as well
  • Healthy egg potato salad is ready yo be enjoyed!!!!!

jeera rice/cumin rice

Recipe..
Ingredients..

  • Basmati rice 1 cup
  • Cumin seeds 2 tablespoons
  • Chopped green chilly 1
  • Chopped cilantro and mint leaves 2 tablespoons (optional)
  • Oil 2 tablespoons
  • Lemon juice 1 tspoon
  • Water 2 cups
  • Salt to taste
Procedure...
  • Heat up a deep pan on medium flame and add oil into it
  • As oil becomes hot add cumin seeds
  • As it splutters,add green chilly,cilantro and mint leaves
  • Mix it well and add washed and soaked(at least for 30 minutes)rice
  • Saute for 4-5 minutes and add measured water,salt and lemon juice
  • Cover the lid and cook until the rice is nicely done
  • Serve hot with curry,raita,pickle and papad!!!!

rava laddoos

Recipe..
Ingredients...

  • Rava/semolina/suji 1 cup
  • Sugar 1 cup
  • Ghee 1/4 cup
  • Golden/black raisins 8-10
  • Cashews 8-10
  • Milk 1/2 cup
  • Pistachios for garnishing laddoos
Procedure...
  • Initially heat up a pan on medium flame and add ghee into it
  • Once the ghee becomes hot add in cashews and roast until golden brown
  • Now add raisins and as they puff up ,switch off the flame
  • Meanwhile heat up another nonstick pan on medium flame and add rava into it
  • Roast it until it leaves nice aroma,and gets golden in color
  • At this stage add sugar and mix until the sugar dissolves
  • add milk and cook for 4-5 minutes on low flame until all the moisture gets evaporated
  • Finally add the fried cashews and raisins along with the ghee and switch off the flame
  • Mix everything well together and as it cools a little bit,form laddoos with ur hands of desired size
  • Garnish them with pistachios and Rava laddoos are ready to be served!!!!
Note..
  • In this recipe,u can use water instead of milk to increase the self life of laddoos,but milk gives better taste and softness

aloo ka bharta/mashed potatoes..

Recipe..
Ingredients...

  • Boiled,peeled and mashed potatoes 5
  • Yogurt 1/2 cup
  • Oil 2-3 tablespoons
  • Finely chopped green chilly 2
  • Ginger paste 1 tspoon
  • Cumin seeds 1/2 tspoon
  • Coriander powder 1 tspoon
  • Turmeric powder 1/4 tspoon
  • Red chilly powder 1/4 tspoon
  • Garam masala 1/4 tspoon
  • Finely chopped fresh cilantro 2-3 tablespoons
  • Salt to taste
Procedure...
  • Initially heat up a pan on medium flame and add oil into it
  • As oil becomes hot,add in cumin seeds
  • Add ginger paste and chopped chillys
  • Saute them well and add all dry ground spices
  • Saute and add yogurt. Mix well and allow the gravy to become thick and ooze out oil
  • At this stage add mashed potatoes and salt to taste
  • Mix well and continue cooking for another 2-3 minutes
  • Finally add in cilantro, mix it well and switch off the flame
  • Serve it hot with roti/rice!!!!!!!

chicken seekh kabab..

Recipe..
Ingredients...

  • Finely minced chicken 2 cups
  • Finely chopped onion 1 
  • Finely chopped green chilly 2
  • Grated garlic 2-3 cloves
  • Grated ginger 1 inch piece
  • Lemon juice 1 tablespoon
  • Green cardamom powder 1 tspoon
  • Chaat masala 2 tspoons
  • Garam masala 1 tspoon
  • Crushed black pepper 1/4 tspoon
  • Butter 2-3 tablespoons
  • Oil 2-3 tablespoons
  • Egg 1
  • Bread crumbs 3-4 tablespoons (adjust accordingly to get right consistency)
  • Finely chopped Cilantro 4 tablespoons
  • Salt to taste
Procedure
  • Take a large mixing bowl and add all the ingredients mentioned above
  • Mix them very well using hands until all the flavors are incorporated into the chicken
  • Now take a soaked bamboo skewer (soaked at least for 30 minutes)and roll some of the above chicken mix onto it to get the shape shown in the pic above
  • Prepare similar kababs with rest of the chicken mix as well
  • Now heat up a non stick grill pan on medium flame and grease it with 1 tablespoon oil
  • As it becomes hot place each of the kababs and cook on low to medium flame until all sides turn golden brown and chicken gets cooked as well
  • Serve hot with lime,onions and  green chutney
Notes
  • For preparing kababs ,if grill pan is not available, regular non stick pan can also be used
  • While serving,u can either serve with skewers or without
  • This recipe could be prepared without skewers as well..in that case give the cylindrical shape with ur hands it self

microwave apple sponge cake..

Recipe..
Ingredients..

  • Maida 1 cup
  • Apple 1,peeled and grated
  • Melted butter 1/2 cup(Room temperature)
  • Sugar 1/2 cup
  • Cashews 2 tablespoons
  • Almonds 2 tablespoons
  • Baking powder 1 tspoon
  • Baking soda 1/4 tspoon
  • Milk 1/2 cup(room temperature)
  • Hershey's drops for garnishing (optional)
Procedure..
  • Firstly to prepare apple sauce,heat up a nonstick pan on medium flame and add grated apple and sugar into it
  • Mix it well and cook on medium flame until all the sugar dissolves and apple becomes soft
  • Now in a bowl add maida,baking powder and baking soda
  • Strain it through the sieve twice for proper mixing
  • Take a large mixing bowl and add melted butter and apple sauce(room temperature) into it
  • Beat them really well and then add milk and maida mix alternately into it,to form a smooth cake batter
  • Finally add in the dry fruits and mix well
  • Grease a microwave safe bowl with butter and place a greased butter paper into it
  • Pour in the cake mix and microwave on max temperature for 4-5 minutes/until the cake is completely baked
  • Garnish with Hershey's dtops,if u love chocolate flavor. Or else top it with apple slices and serve!!!!!!

Ingredients..

For frying  egg
  • Oil 2-3 tablespoons
  • Red chilly powder 1/4 tspoon
  • Turmeric powder 1/4 tspoon
  • Black pepper crushed 1/4 tspoon
  • Garam masala 1/4 tspoon
  • Salt to taste
For egg masala
  • Oil 1 tablespoon
  • Chopped onions 2-3
  • Chopped tomatoes 2
  • Chilly ginger garlic paste 2 tspoons
  • Coriander powder 2 tspoons
  • Red chilly powder 1 tspoon
  • Turmeric powder 1/4 tspoon
  • Garam masala 1/2 tspoon
  • Biryani masala 1 tspoon
  • Yogurt 2 tablespoons
  • Chopped cilantro 1/2 cup
  • Lemon juice 1 tablespoon
  • Salt to taste
For dum
  • Fried onions 1
  • Fried cashews 2-3 tablespoons
  • Fried raisins 2-3 tablespoons
  • Chopped cilantro 3/4 cup
  • Lemon juice 2 tablespoons
  • Ghee 2 tablespoons
  • Biryani masala 1 tspoon
Procedure...
  • Hardboil the eggs,peel them and slice each into 3 as shown

  • For frying eggs,heat up a pan on medium flame and add oil into it
  • As oil becomes slightly hot add all the dry ground spices mentioned under "for frying egg"along with salt to taste

  • Place egg slices and flip and cook until both sides turn golden brown


  • Remove eggs into a bowl and add chopped onions into the same hot oil(add 1 tablespoon of extra oil if required)
  • Season it with salt and saute until the onions turn soft and brown

  • Now add chilly ginger garlic paste

  • As its raw smell is gone ,add tomatoes and cook until they becomes tender and mushy and ooze out oil

  • Now add dry ground spices mentioned under "for egg masala"and saute well
  • Now add yogurt,lemon juice and cilantro 

  • Mix well and add fried egg pieces
  • Slowly coat them in the masala and cook for another 3-4 minutes and switch off the flame

  • Now for dum ,take a deep nonstick pot and apply ghee at the bottom
  • Add half of the egg masala and spread half of the ghee rice above it
  • Top it with all the ingredients mentioned under "for dum"(use only half the amount mentioned)
  • Now repeat the same again by layering rest of the egg masala,ghee rice and all other items
  • Cover the lid tightly and seal the edges with aluminum foil
  • Cook on low to medium flame for 10-15 minutes
  • Serve hot with raita,pickle and papad!!!!
